Braised Beef Tortellini

                                                                                                                INGREDIENTS
                                                                                                                FILLED PASTA DOUGH           TORTELLINI FILIING
                                                                                                                250 g  Pasta flour           200 g  Alt-minced meat
                                                                                                                250 g  “00” flour            20 g   Dark caramelized
                                                                                                                210 ml  Water                      onions
                                                                                                                5 g    Salt                  10 g   Wine reduction sauce
                                                                                                                15 ml  Vegetable oil         3 g   Black pepper
                                                                                                                1      Xanthan gum           1     Minced garlic clove
                                                                                                                4      Beetroot sosa pigment   10 g   Dried tomato paste


                                                                                                                PREPARATION
                                                                                                                VEGAN FILLED PASTA DOUGH
                                                                                                                1.  Knead for 10 min
                                                                                                                2.  Then vac bag it, let rest for one hour then shape
                                                                                                                TORTELLINI FILIING
                                                                                                                1.  Mix all ingredients in a medium size bowl
                                                                                                                2.  Taste and adjust flavor
                                                                                                                ASSEMBLING
                                                                                                                1.  Knead the dough using a pasta machine to #6 thickness
                                                                                                                2.  Punch dough using a 8cm diameter cookie cutter
                                                                                                                3.  Put 10 g of filling in the center of each circle
                                                                                                                4.  Water the edges of each tortellini
                                                                                                                5.  Fold and place on a floured tray
                                                                                                                COOKING
                                                                                                                1.  Bring water to a boil
                                                                                                                2.  Add the tortellini into water and cook for 4 min
                                                                                                                3.  Remove and add to sauce
